We love this Asian flavor Caesar Salad–we love it because it is easy to make, delicious, and healthy. My husband, Bill, ate a lot of cruciferous vegetables while recovering from cancer. (If you haven’t read our story, please read it here.) I cooked a lot of cauliflower, broccoli, cabbages, and Brussel sprouts among other veggies. And I just learned arugula and kale are in the cruciferous group. 


No wonder Arugula shows up in 4 out of 5 categories of self-defense systems in “Eat to Beat Disease” written by Dr. William Li. Green tea and sesame seeds are “grand slammers,” which means they have all 5 capabilities of self-defense systems we naturally have.

The “air-fried mushrooms” make a unique topping for this salad, replacing croutons. The mushrooms not only offer a nice texture but also a satisfying complex flavor to this delicious healthy salad.

Mushroom Ingredients and Directions

  • 1 Portobello Mushroom cut into 1” or 1 cup halved white button mushrooms
  • ½ tsp. “Matcha spice”*
  • 1 tsp. Gluten-free flour
  1. Wet mushrooms and gently pat dry them. Mix “Matcha spice” and flour, and toss the mixture with slightly dump mushrooms. Arrange them in an air-frier. Air-fry them at 325F for 6 to 8 minutes.

2. Arrange ¼ of the air-fried mushrooms on top of 2 cups of Arugula and ½ cup of fresh tomatoes, cut into bite-size pieces. Enjoy a salad with “Asian Caesar Salad Dressing”–see the recipe below.

*”Matcha Spice” is a versatile seasoning, which can help to reduce salt intake. You can use Edible Green Sencha tea powder instead of Matcha if you prefer low caffeine. Click the image below to see the recipe.

Asian Caesar Salad Dressing

Process all the ingredients in a food processor or with a mixer:

  • 4 Tbsp. Tahini
  • 2 Tbsp. Ginger Juice or 1 Tbsp. grated Ginger
  • 4 cloves Garlic
  • 2 Tbsp. Sesame Seeds
  • 2 Tbsp. Miso
  • ½ C water
  • 1 tsp. Balsamic Vinegar
  • 1 tsp. Edible Green® Sencha tea powder

Enjoy the dressing over the assembled salad. Serve the salad with our “Anti-Inflammatory” spiced Cauliflower Steak.
