Roasted Tuscan Tofu & Cauliflower Gravy

Roasted Tuscan Tofu

  1. Process the first 5 ingredients and marinate tofu in the mixture for 30 minutes or longer.
  2. Preheat oven to 375 degrees F.
  3. Lay tofu in a single layer on a cookie sheet lined with parchment paper.
  4. Reserve marinade for gravy.
  5. Bake for 35 minutes. Turn the tofu slices over after 20 minutes.
  6. Arrange baked tofu slices alternately with thinly sliced orange, sprinkling Herb de Provence.
  7. Cover with foil, and warm in the 350 degrees F oven for 15 minutes.

Tuscan Cauliflower Gravy

  • 3 cups cauliflower florets
  • leftover marinade from marinating Tofu
  • 1/4 tsp. grated orange zest
  • 1/4 tsp. Herb de Provence
  1. Spread cauliflower florets on a cookie sheet lined with parchment paper. When you turn the tofu slices at the above step 5, put the tray in the oven as well. Roast cauliflower florets for 10 minutes.
  2. Cook roasted cauliflower in the reserved marinade over medium heat for 10 minutes. Remove from heat.
  3. Add orange zest and Herb de Provence. Let it cool for about 10 minutes.
  4. Process until smooth.

Baked Sweet Potatoes with Smokey Black Beans

  1. Preheat oven to 375 degrees F.
  2. Spread sweet potatoes in a single layer on a cookie sheet lined with parchment paper. Bake for 20 minutes.
  3. Mix black beans and “Unforgettable” roasted brown rice powder.
  4. Toss potato pieces gently so they won’t stick to the bottom of the parchment paper. Pour the mixture over the sweet potatoes. Bake for 10 minutes in a 375 degrees F oven.
  5. Toss in black sesame and orange zest.

No Sugar Cranberry Sauce

  • 3 cups cranberries
  • juice freshly squeezed from one orange
  • 1 cup golden raisins
  • 1/2 cup warm water
  • 1 tsp. grated orange zest
  • 1 tsp. “HappyHeart” chai spice
  1. Put cranberries and orange juice in a pot. Add water just enough to cover the cranberries. Cook it over medium heat. When it starts to boil, turn down the heat and simmer until the cranberries are soft and mushy.
  2. Process golden raisings and warm water until smooth. Add it to the pot while it’s cooking.
  3. When cranberries are soft and mushy, remove them from heat, and add orange zest and chai spice. Cool completely before serving.
