Coconut Pineapple:

Ingredients

  • 1 c Canned pineapple chunks, drained
  • 1 Tbsp. Honey
  • 1 Tbsp. Unsweetened shredded coconut
  • 1/4 c of your favorite granola
  • 1/3 c Pineapple
  • 3 Tbsp. Whipped cream

Directions

  1. Mix 1 c canned Pineapple chunks, drained, with 1 Tbsp. honey.
  2. Add 1 Tbsp. unsweetened shredded coconut to pineapple and toss to coat evenly.
  3. Assemble 1/4 c of your favorite granola, 1/3 c pineapple, and about 3 Tbsp. whipped cream in the order as shown in the picture.

Yield: about 3 servings

Ginger Green Tea Topping:

Ingredients

  • 1/2 c Heavy cream
  • 3/4 tsp. Green tea powder (Edible Green® or MATCHA)
  • 1/4 c Sugar
  • 1/4 tsp. Chopped or grated ginger
  • 1/4 tsp. Vanilla extract

Directions

  1. Whip 1/2 c Heavy cream until stiff peaks form
  2. Mix 3/4 tsp. Green tea powder (Edible Green® or MATCHA), and 1/4 c Sugar
  3. Add the green tea mixture, 1/4 tsp. Chopped or grated ginger, and 1/4 tsp. vanilla to whipped cream.
  4. Cover and chill until used.
