Matcha Overnight Oats
Quick and healthy breakfast to boost immunity!
Ingredients:
1 cup Quick Oats
1½ tbsp Chia Seeds
1½ tbsp Lucama Powder (optional)*
1½ tbsp Matcha or Sencha green tea powder
1½ tbsp Lightly toasted Flaxseed Meal
¼ tsp Salt
1 cup Plain Almond Milk
1 cup Plain Greek Yogurt
1 tbsp Maple Syrup
Instructions:
- Mix well the first 6 dry ingredients, from oats to salt, in a mason jar.
- Mix the last 3 wet ingredients together and add the mixture to the mason j
- Stir the mixture with a spoon thoroughly.
- Refrigerate overnight.
- Enjoy as-is, or top with granola, fresh fruit, dried fruit, nuts, seeds, and/or shredded coconut.
- *Note: If you are not using Lucama Powder, you may want to increase the amount of Maple Syrup to 2 Tbsp.
- The mixture will keep for up to 3 days in the fridge. We make a couple of jars at once, and get 3 servings a day for 3 days–9 servings total.
