1. Higher in Catechins / EGCG
Typically, Japanese Green Tea uses the steaming method and Chinese Green Tea uses panning, or roasting method to stop oxidation after tea leaves are harvested. The steaming method preserves more Catechins and EGCG in tea leaves.
Originally, the roasting method was used in Japan. The method was introduced when green tea was brought from China. During the 18th century, a new process, steaming method, was invented in Uji, Kyoto Prefecture. This new method produced fresher, and more flavorful green tea, and it quickly dominated the market nationwide. The success of this new method also contributed to spreading the custom of green tea drinking throughout Japan.
2. Free from Lead, Cadmium, Arsenic, and Mercury
Soil is one of the main components that determines health of the tea leaf. Organically well-managed soil is soft and deep, and grows healthy tea leaves. Generally speaking, Chinese Green Tea is high in Lead content. Chinese Green Tea also contains Cadmium, Arsenic, Mercury.

Left: healthy leaf is filled with dense cells. Thick, darker color, more weight, high yield, strong immunity against pests and diseases, more tolerant against cold weather/drought, fragrant, richer flavor, longer shelf life, and more nutritious.
Right: leaf grown in poor soil offers insufficient cells. Thin, light, pale color, low yield, prone to diseases and pests, less tolerant against cold weather/drought, less fragrant, less aroma, flat taste, short shelf life, and less nutritious.
