Matcha Pistachio Cereal Bites
These cereal bites are a portable snack or delicious and nutriious crumbled and sprinkled over yogurt
Pistachio Nuts, shelled and roasted
Puffed Grain Cereal
Coconut Oil, melted
Brown Rice Syrup or Honey, heated slightly
Preheat oven to 325° F. Line a 9×9 baking dish with parchment paper, or carefully oil the pan.
Chop pistachios into small pieces by hand, or pulse a few times in a food processor.
Combine all of the ingredients except coconut oil and honey/brown rice syrup in a large bowl, and stir a few times.
Then pour the melted coconut oil over the dry ingredients, and finally, add the honey or brown rice syrup and continue to stir until the cereal is completely coated.
Press the mixture into a prepared pan, and bake for 20 minutes – look for the edges to brown slightly, and the center of the mixture to harden.
Let cool completely, then cut into 1 ½” by 1 ½” squares (or crumble into granola)!
