Instructions
Cook apple and 1 Tbsp. water in a pot with a cover on over medium heat. When it starts to boil, turn down the heat and let it simmer until apples become softened for 10-15 minutes.
Add Maple syrup and bring it back to boil.
Mix 1/2 tsp. Organic Hojicha powder and Tapioca powder. Add the mixture to the apple and maple syrup mixture. Keep simmering while stirring until it gets thickened.
Preheat oven to 400 F. Cut the sheet into 12 squares. Place them 1″ apart on a baking sheet lined with parchment paper.
Lightly score 1/2″ inside from edges with a knife. We used the rim of a cup to make a mark.
Pork centers with a fork.
Brush tops with egg.
Bake for 10 minutes. Remove from oven and flatten centers with a spoon.
Bake 5 minutes more until golden brown.
Remove from oven and press centers down one more time so the centers are “dented.”
Cool the squares on the rack.
Scoop 1 heaping Tbsp. whipped cream in the center of each square.
Place 2 wedges of apple on top of whipped cream.
Mix 1/2 tsp. organic Hojicha powder and 1/2 tsp. cinnamon powder. Sprinkle the Hojicha powder mixture liberally on top of the square.
