Here’s a yummy Granola made with Matcha Plus so you can make a great start to the day.

Ingredients:

6 cups Oatmeal

1 cup Pumpkin Seeds

2 tbsp White Sesame Seeds

1 tbsp Black Sesame Seeds

2 tbsp Matcha Plus (Matcha with Ginseng & Guarana)

1 tbsp Cinnamon

1 tbsp Ginger

1 tsp Sea Salt

⅔ cup Coconut Oil

¼ cup Molasses

½ cup Brown Rice Syrup

½ cup Golden Grapes

½ cup Goji Berries

2 cup Shredded Coconut

Instructions:

  1. Heat oven to 290° F. Line 2 large baking sheets with parchment paper
  2. In a large mixing bowl, stir together the first 8 ingredients, from oatmeal to sea salt.matcha granola recipe ingredients
  3. In a separate bowl, stir together the melted coconut oil, molasses, and brown rice syrup until well combined.
  4. Stir the coconut oil mixture into the dry ingredients until the coconut oil mixture is evenly distributed in the dry ingredients.
  5. Spread half of the mixture on one of the prepared baking sheets, and spread the rest on the other prepared baking sheet. Bake for 30 minutes, stirring every 15 minutes.
  6. Stir the mixture and bake 10 minutes longer. Add half of the shredded coconut, golden grapes, and goji berries to each of the baking sheets. Bake 3 more minutes. Stir in the rest of the shredded coconut and bake 2 more minutes.* See the note below to make it even better.homemade matcha granola
  7. Remove baking sheets from the oven and transfer them to a wire baking rack. Let cool completely. Store in an airtight container at room temperature.
  8. Serve it with plain Greek yogurt, almond butter, and a little bit of maple syrup if you wish, for a quick and healthy breakfast.homemade matcha granola served with almond butter and Greek yogurt

Note 1: We have been loving this granola for a while now. As we love it so much, we wanted to make it even healthier by adding some more “Super Ingredients.” We found these ingredients made it even tastier.
At #6 in the recipe, when you add the second half of shredded coconut, also add:

– 1 Tbsp. Flaxseed meal

– 1 Tbsp. Lucuma powder

– 2 Tbsp. Chia seeds

All of the above add antioxidants and fiber to the granola. Also, Lucuma powder adds subtle fruitiness to the flavor. Do not bake too long after you add Lucuma powder as the subtle ‘tropical’ flavor goes away if you heat too long.

Note 2: Feel free to add your favorite dried fruit. Here we added chopped dried figs. When you chop them, carefully remove the hard stem still on the figs. Dried figs are as sweet as dates, but with less sugar and more fiber and micronutrients, such as potassium, calcium, and magnesium.
